Grass Valley, CA — After five successful years operating as a boutique wine shop inside the Holbrooke Hotel, New West Wine Co. is excited to announce the opening of its new location, New West Wine Bar & Bottle Shop, at 126 Mill Street, with doors opening Wednesday, March 25.
The new space combines a curated global bottle shop with an intimate, modern wine bar offering wines by the glass, bottles to enjoy on-site, and small plates. This expansion allows New West Wine to grow beyond the limitations of its previous 395-square-foot hotel location and offer a fuller wine bar experience, private events, and expanded tastings.
Owned and curated by wine expert John Seeger Gilman, New West Wine focuses on high-quality wines from around the world—from Napa to Sardinia to Alsace—featuring both classic regions and lesser-known producers. The selection includes natural and biodynamic wines, but the primary focus is simple: well-made wines with character, story, and a sense of place. Every wine in the shop is personally selected and tasted by Gilman to ensure a unique and thoughtfully chosen collection.
New West Wine Bar & Bottle Shop is designed to be a welcoming, comfortable space where both new and experienced wine drinkers can explore and learn about wine. The shop will offer tastings, educational events, private events, and a monthly wine club featuring curated selections from around the globe.
